Toad in the Hole or You Gotta Love Saturday

It is Saturday morning. I am not a napper, nor am I one to sleep in. My internal alarm clock goes off anywhere between 5:30 and 7am - usually closer to 6:15, but it does vary. If I sleep until 7, it is a treat. This morning my body must have been having a banquet because I slept until 9am. I can't even remember the last time I did that! I didn't have to drive Nate to work this morning, David was on shift at the firehall and is going to make a training video with a friend, so he wasn't going to come home and wake me up, the girls are sleepers... as a matter of fact, Ali is still sleeping. Kami got up about 20 minutes after I did and then decided she would make me breakfast... her favorite breakfast, Toad in the Hole. Some people call it Eggs in a Basket. Whatever it is called, it is yummy, and is only made yummier by the fact that I didn't have to make it!



TOAD IN THE HOLE

1 slice of bread
1 egg
1 T. butter
salt and pepper to taste

Butter both sides of the bread. Using a biscuit cutter, cut a hole in the center of the bread, reserving the "hole". Place slice of bread in a hot frying pan and crack an egg into the opening. Place the "hole" along side the bread to toast. Flip the bread and the hole over when the egg is halfway cooked the way you like it. Finish cooking to desired doneness and enjoy!

A friend of mine told me the other day that she showed her 7 year old son my muffin recipe. He was on "food prep duty" that day and decided to make them. Later that evening she told me they were all standing around the kitchen table enjoying nice warm muffins!  I am amazed and so pleased to see her teaching her children to cook at such a young age. There are so many positive things that come from teaching your children to cook for themselves and for others. One day he will be a great husband and daddy because he can step in and cook for his family. That is one of the great things about my husband. He is an awesome cook, loves to try new things and experiments. He does a lot of cooking at firehall and he is even expanding the "taste horizons" of his fellow firefighters. I dare say they have tried (and liked) a few things over the last few months that they have never had before. Hopefully one day they will know the difference between scallops and scallions! :)
